Take 100 messages from the Bitext dataset (it already has category and intent) and write 50 realistic emails of your own (long, messy, Hinglish, angry, with order numbers). For each, write the expected JSON. Split: 30 for prompt development, 120 for the final test — do not tune on the test part.
