Version prompts outside code

Move prompts out of code into a prompt registry (Langfuse prompt management, or versioned files in Git): each prompt has a name, version and label (production / staging). The app fetches the 'production' prompt at runtime, so you can roll a prompt forward or back without redeploying, and every trace records which version answered.
