Routes, Pydantic models and Swagger docs

Build your first API: a health route, then a route that takes JSON and returns JSON. Define the input and output with Pydantic models so bad input is rejected automatically (422) and the docs page at /docs shows and tests every route. Run it with Uvicorn and test it in Swagger and Postman.
